Cooking class - Llapingachos

 Every once a while, we are having cooking classes at Vida Verde. Students should not only eat the Ecuadorian food, but also know how to prepare a traditional meal to show it their friends and family at home.
Llapingachos originated in Ambato. It is fried, mashed potato surrounding a center of cheese which is generally served with baked or fried pork. It is typically served with avocado, sausage, fried egg, tomato and lettuce salad on the side. This dish forms part of Ecuador's culture, and is one of the representative icons of Highland food. Llapingacho is popular not only in Ecuador's Highlands but also in the coast and eastern provinces.

Give me a break!


A usual break at Vida Verde. For relaxing the mind after and while having classes we group up in the courtyard and just hang out or having fruit markets, sing togehter or just talk...

Most people are heading to Baños or Mindo, even though right in the neighborhood
there's all you need!





Whether you are down for the crazy swing or the classic zip lining, there are enough
attractions that raises your blood pressure! 


And of course, the chill-out area to calm the nerves afterwards :)



Puerto López

Weekend trip to the cost with the Notre Dame students of 2014

 The whole group, plus some teachers and Rosa, our beloved school's owner, went all the way down to Puerto Lopez to spent some relxing time on the cost.


Puerto Lopéz is a very small harbour that is famous for being closely located to the island "Isla de la Plata", which is considered to be the Galapagos' small brother.
During this time of the year, Puerto López is highly visited by Ecuadorians, as well as foreigners because of the humpbuck wahles that are passing along the coast.
Whale watching is kind of a big deal this time of the year :)
How could we have skipped the beach "los Frailes"!?
Always part of the trip is this gem, close to Puerto López.
This small beach provides the best atmosphere that you need for relaxing:

Sand as soft as cotton and the ocean greenish-blue and quiet and very few people!

Only los Frailes would be enough reason to travel to the cost!
